I am currently involved in a love affair with Thai Food and I have no problems with admitting it. Drunken noodles (or Pad Kee Mao) is an amazing, spicy stir fry dish made with wide rice noodles. I had some shrimp I needed to finish using before it went bad so I decided to try my hand at making this dish. Surprisingly it is fairly simple and pretty quick so here goes...
Yield: 4 servings
*depending on the noodles you get you may need to skip this step. I used authentic hard noodles from a specialty store which require a soak before boiling.Follow the directions for the noodles you purchase which should be on the back of the package.
Remember this is a spicy dish so feel free to adjust the pepper levels accordingly. You can also use chicken, beef, or tofu. Chef's choice.
